Our Story

Husband and wife team Jonathan and Elana Joseph have over 50 years of combined experience in the hospitality industry. Jonathan, who doubles as the lodge chef, was born and raised in Miami, Florida, where he attended Florida International University. At Florida International University he studied under and was a teaching assistant for Chef Michael Moran (Chef to royalty), studied hotel management under Marcel Esscofier and earned a Bachelor of Science in Hospitality focused on hotel and restaurant management while graduating summa cum laude.

Jon has worked in some great restaurants, but thanks to his involvement with the South Beach Food & Wine Festival, while as a student and alumni year after year, he has had the pleasure of working alongside some of the most recognized food personalities in the world, including Anthony Bourdain, Bobby Flay, Aaron Sanchez, Mary Sue Milliken, Rachel Ray, Susan Feniger and Tyler Florence just to name a few.

Originally from Queens, New York, Elana moved to Florida in her early twenties which is where she and Jon met, at a restaurant no less. She hails from a long line of Chef’s, Butchers, Bakers, and Winemakers, so this industry comes naturally to her. She has a background in fine dining, has worked in restaurants her entire adult life, and has also served at the exclusive international Chaîne des Rôtisseurs Food & Wine Organization. In the off season they love to travel and immerse themselves in different cultures, but especially the cuisines. Jon and Elana’s love for all things food and drink can only be trumped by one thing, well two actually; their Lodge Kitties, Chad & Cosmo. You can read their bios below.

My name is Chad, and I adopted my humans in 2011 when they won me over with good food and a warm bed. I’m a bit of an outdoorsman and love my solitude, but decided I needed to settle down with a nice family. I decided to start hanging around the lodge, knowing they would be charmed by my good looks and cool demeanor. Needless to say it worked. They give me lots of love and affection, which I tolerate, and in return I allow them to dote on my every need. As handsome as I am, I’m a little shy, but super friendly, so I’ll probably introduce myself. My favourite past times are hunting, eating, stalking my humans, and sleeping, all in that order. Hope to see you at the lodge where I will probably say hi, but may not, just depending on the day or whatever, but probably yes.

Hello, my name is Cosmo. My humans adopted me in 2017. I have lots of energy, and love people! I’m super friendly, super cute, super sweet, and very outgoing, so I will probably try to get to know you while you’re here! I’ve even been caught trying to get into people’s cars if they leave the doors open for a bit, so please make sure I’m not inside before you take off, or my mom and dad will be very sad! If I see you on the Lodge property I will definitely say hi to you, see what you’re up to, that sort of thing. The things that make me happy are eating, sleeping, and pestering my older brother Chad. Oh oh, and I love to cuddle and purr! See you soon!
